Don’t be surprised if some of the more omnivorous people you know enjoy these too; they can be just as filling and satisfying as hamburgers made with meat. This recipe is very flexible and works well with a wide variety of spices and veggies – feel free to experiment! And best of all, they’re ridiculously healthy!
1/2 cup of quinoa
¼ cup drained, chopped sun-dried tomatoes (about 6)
1 small onion, chopped
1 ½ cup black beans, cooked
2 minced gloves of garlic
2 tablespoons of dried steak seasoning of your choice (choose according to your preferences)
8 hamburger buns
1. 1. Stir the quinoa and half a cup of water in a small saucepan. Add salt if you want (optional). Wait for the quinoa to boil, then cover the saucepan and drop the heat to medium-low. Allow to cook for 20 minutes or until the liquid has been absorbed into the quinoa.
2. 2. While you’re doing that, put the onion and the tomatoes into a medium-sized frying pan. Set the stove to medium heat. The oil on the tomatoes is usually sufficient to sauté these vegetables. After 3-4 minutes, the onion should be softened. If not, wait until it is.
3. 3. Now, stir in ¾ cup of black beans, the garlic, the steak seasoning you have selected, and a cup and a half of water. Simmer the mixture for 9-11 minutes. When most of the oil has evaporated, you’re ready for the next step.
4. 4. Now you’re ready to take that mixture and blend it in your food processor. Place the black bean mixture from above inside the food processor along with ¾ cup quinoa (set the rest aside), and blend until the mixture is smooth and homogenous.
5. 5. Take the mixture above and move it to a bowl, and then stir in the remaining ¾ cup of quinoa as well as the remaining ¾ cup of black beans. Season to your taste with salt and pepper, and allow to cool.
6. 6. Preheat the oven to 350 degrees Fahrenheit. Get a baking sheet ready with cooking spray. Make patties out of your bean mixture—remember, it should make about eight. Put them on the baking sheet, and place in the oven for 20 minutes. When they are somewhat crispy on top, they are ready to flip over and cook for 10 more minutes. When both sides are crispy and brown, you are done, and can take them out and put them on the buns and serve.
