MY VERY OWN V-8

Tomatoes are rich in vitamin C, carrots give you beta-carotene, celery supplies potassium, while spinach gives you lots of magnesium and folic acid.

All of these ingredients are present in V-8 juice… but if you’ve ever tried the store-bought vegetable juice V-8, you might have noticed how salty it tastes.

That’s because it contains a ton of sodium- about 480mg to be exact- which really isn’t that healthy after all!

This DIY version of V-8 has all the goodness of 8 servings of vegetables, without all that added salt!

  • 4 large plum tomatoes
  • 1 red or orange bell pepper
  • 1 small beet
  • 4 medium carrots
  • 1 handful of raw spinach
  • 1 large cucumber
  • 3 stalks of celery
  • 1 cup of parsley (both the leaves and the stems)

COMBINE all the ingredients and put them through your juicer SERVE chilled! (Makes 1 serving)
