Paleo Meatballs & Tomato Sauce

These aren’t just any meatballs – this particular combination of spices and herbs yields an especially flavorful little morsel that will have you craving more. The homemade tomato sauce complements these paleo meatballs nicely as well. The only downside is that they do take awhile to prepare as far as meatballs go, but the extra time is definitely worth it. You can cut down on that time significantly if you have all the items prepped and ready to go, or by just going with a store bought sauce.

Ingredients

  • 1 lb. extra lean ground beef
  • 1 small onion (finely chopped or grated)
  • 1 egg
  • 3 tbsp. fresh parsley (minced)
  • 2 tbsp fresh cilantro (minced)
  • 2 tbsp. cumin
  • 1 tbsp. paprika
  • 1/2 tsp. cinnamon
  • 1/2 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. ground ginger
  • 2 tbsp. extra virgin olive oil
  • 2 small onions (chopped)
  • 2 cups organic canned crushed tomatoes
  • 1/2 cup fresh parsley (chopped)
  • 1 cup beef broth
  • 4 cloves of garlic (minced)
  • 2 tsp. cumin
  • 1/2 tsp. black pepper
  • 1 tsp. cayenne pepper

Instructions

  • 1. Crack the egg into a large bowl
  • 2. Mix in the ground beef and the first 11 ingredients.
  • 3. Roll the mixture into approximately 1 inch balls, and put aside.
  • 4. To create the sauce, start by heating the Extra Virgin Olive Oil in a saute pan over medium heat.
  • 5. Add the chopped onions and cook for approximately 7-9 minutes until the onions are translucent and soft.
  • 6. Add the parsley, cayenne, pepper, and cumin to the pan and cook for an additional 5 minutes.
  • 7. Add the crushed tomatoes and beef broth, stir well, and reduce heat to a simer.
  • 8. In another pan, cook the meatballs over high heat until nicely browned.
  • 9. Add the sauce to the meatballs, and cook for an additional 15 minutes over low-medium heat.
  • 10. Serve and enjoy with zucchini pasta or kale.
